Roseburg— The culinary arts students at Umpqua Community College will be preparing and serving a series of three prix fixe meals as their final project for their Cooking Theories III class.
The public which enjoys fine dining is invited to these meals and will help grade the students’ work.
The focus of this project is to give the students an opportunity to develop a menu, organize production and service in a kitchen, design their dining room décor, and coordinate front and back of the house during service. For each meal, two students will be the Chefs and the others will be their employees.
Half of the students’ grades will be determined by their customers, by filling out a survey card which will be found at each table.
The dates for the meals are as follows:
The cost for the meal is $12.50. Alcoholic beverages will not be served at any of the events.
The students are still working on the menus so at this time menus are not available.
At the present time, UCC’s culinary school is preparing and serving a series of buffet lunches open to the public. Monday, April 21, Italian cuisine will be served; on Monday, May 5, Greek; Monday, May 12, French; Monday, May 19, Thai; Monday, May 26, Caribbean, and Monday, June 2, an American brunch. Buffet service runs from 11:15 am to 12:30 pm and costs $6.50. Reservations are not required.
