Understanding and managing gluten intolerance

Roseburg— A class for “Coping with Gluten Intolerance” will be held at the at Umpqua Community College Workforce Training Center, 2555 NE Diamond Like Blvd., on Thursday, January 10, 2008, from 6-9 p.m. Class fees and tuition are $25 and the course number is 32844. Gluten intolerance is a genetic disorder that affects one in five Americans. It is an intolerance to a protein found in grains, most notable wheat. An array of inflammatory issues including irritable bowel syndrome (IBS) and joint pain are some of the most common symptoms. Bread, pasta, crackers, pizzas…all contain wheat. If you have gluten intolerance, you can’t easily digest these foods, but avoiding grains is challenging. Many products have hidden gluten in them; it is important to know how to read labels, how to identify gluten-containing foods, and how to avoid them. Gluten intolerance can effectively be managed with dietary modifications.

Certified holistic nutritionist Tammera Karr offers important information on managing a gluten-free diet. Three hours of Continuing Education are provided.
